Chocolate Without The Guilt!
Easter is nearly here which means for some it will be a time of indulging in chocolate and for some maybe OVERINDULGING in this delicacy!! Did you know it is possible to enjoy chocolate without the guilt. Yes, there is such a thing as healthy chocolate. Below are two of my favourite healthy chocolate recipes which I like to make at this time of the year – any time really.
RAW VEGAN COCONUT ROUGH
Ingredients: 1 cup Natural Road Almond Meal; ¼ cup Organic Road Cacao Powder; ¼ cup Shady Maple Syrup; 1 cup Organic Road Shredded Coconut; ¾ cup Organic Road Coconut Oil; ¼ cup Go Vita Aust Sunflower Kernels, 1/4 cup puffed Lotus Organic Puffed Quinoa; ¼ cup Australian pumpkin seeds; 1 tablespoon Loving Earth Cacao Nibs
Method:
Mix all the dry ingredients except cacao nibs. Melt coconut oil and mix through dry ingredients. This can be done in a food processor although I find it just as easy to mix through by hand. If the mixture is too dry add extra coconut oil. Sprinkle the mixture with cacao nibs. Press the mix into a small, lined cake tray pressing down with the back of a spoon. Place in refrigerator to set hard then cut into small squares. Store in the refrigerator in an airtight container.
RAW CACAO BLISS BALLS
Ingredients:
1 cup Go Vita Organic Medjool Dates, 1 cup Go Vita Aust Walnuts, 1/3 cup Organic Road Cacao Powder, 1/3 cup Organic Road Coconut Oil, 1 cup Organic Road Shredded Coconut, ½ cup Loving Earth Cacao Nibs, 1 Tablespoon Go Vita Organic Black Chia Seeds.
Method:
Remove pits from dates and chop dates. Process walnuts, cacao powder, ½ cup shredded coconut plus coconut oil in food processor. Add dates and process. If the mixture is too dry add a little more coconut oil. Let mixture sit for 10 minutes then roll mixtures into bite size balls. Roll balls in a mixture of shredded coconut and cacao nibs. Store in refrigerator
